This is not exactly representative of a family meal in our house (there are generally fewer pumpkins for a start) but this week see us hurtling towards a busy Autumn half term packed with lots of fun activities (sailing, white water rafting, play dates, a visit to the Henry Moore Foundation, an absolute gem on our door step) and some less fun ones (entrance exam prep for our Yr 6s). So I am very focussed on planning, hassle free, delicious, crowd pleasing meals which I can whip up in a jiffy, which know the whole family will enjoy and which, I hope, will keep body and soul together during a busy week.
Enter one of my absolute favourite “Go To” recipe books:
My copy of this wonderful book is now a bit of a “Bagpuss” (“baggy and a bit loose at the seams”) having been used virtually every week over the 10 years since it was given to me. I have chosen two of my favourite recipes for this week’s menu: Bahian stew and Chilli con carne.
Soup: (£5.50) Cauliflower & chickpea
Salads: (£6.50 large/4.50 small)
(1) Mangetout, french beans, orange & hazelnut.
(2) Stuffed portobellos mushrooms (stuffed with garlic, halloumi, pine nuts and coriander)
Tart: (£16 whole/£9 half) Mushroom & taleggio
Supper: (£12 for 2, £22 for 4 or £5 per head for more)
(1) Bahian stew with cod & prawns (a traditional Brazilian stew combining tomatoes, coconut milk and peanuts)
(2) Chilli con carne (the addition of maple syrup and dark chocolate absolute make this recipe)
Pie: (£6.50 per individual pie) Coq au vin
Energy bars (£1.50 each)
