Summer of fun?

As we all nervously await announcements on the much longed for easing of restrictions with plans for the summer still on the back burner, many are planning small get togethers and a tentative return to some fun over the summer. As a result, I’m excited to say that my diary is already pretty full with bookings for lunches, dinners, parties and picnics. Therefore, please do get in touch soon if you would like me to quote for an event over the summer.

…. and don’t forget to place your order for you summer freezer full of Just Add Parsley delicious ice creams and sorbets. All are £10 per tub and made freshly to order so you choose your your hearts desire when it comes to flavours from frosé (rosé sorbet) to homegrown mint choc chip, cookie dough, honeycomb ….. and near enough anything and everything in between.

Picnic season is nearly here

I don’t suppose anyone needs to be reminded that from next Monday 29 March we will be allowed “outdoor gatherings” for 2 households or the Rule of 6. It might not be exactly picnic weather and we may need to layer up but I cannot wait to sit, chat and share a meal with much loved and sorely missed family and friends (even if it does has to be one household at a time).

Whether you are planning a visit to National Trust or English Heritage property, the local park or even the garden, a Just Add Parsley grazing platter is the perfect, delicious, effortless, completely fuss free, portable picnic in a box.

Packed with variety, colour and a stunning array of tasty, tempting treats including delicious cured meats, cheeses, homemade chutney and relish, home baked ham, home made tart and dotted with fresh fruit and nuts or maybe you would prefer a fish and seafood platter with homemade smoked salmon or smoked haddock and horseradish pâté, smoked salmon, prawns.

Choose crackers, oatcakes and crispbreads or a home made focaccia to accompany your platter.

You could also choose a sweet platter full of mouthwatering homemade sweets, cakes, biscuits and desserts or even a complete afternoon tea.

Platters can be tailored to your occasion, preference, dietary requirements …. or just to what takes your fancy.

Platters range from £10 to £12.50 per head. Please give 48 hours’ notice and notify me of any dietary requirements at the time of ordering.

Exciting news from the Just Add Parsley kitchen!

It’s good to be back in the kitchen after what feels like an eternity.

Since my last weekly menu quite a lot has happened in the Just Add Parsley kitchen. I have had the pleasure of providing afternoon tea for a baby shower, 10 different flavours of ice cream and an array of tarts for a family 70th birthday party, brunch for a girls’ weekend, “back to school” energy bar & treat stashes and a variety of dishes for various clients to take away with them on their staycations. I am always delighted to provide ideas and menus for bespoke events and occasions such as these.

As well as cooking, I’ve also been innovating and developing new menu ideas for every day and for special occasions.

To this end, coming soon will be sumptuous and delicious Just Add Parsley graze platters; jam packed with lavish, carefully selected & locally sourced ingredients from artisan cheeses, charcuterie and antipasti to homemade dips and chutneys for a lavish lunch/evening “choosing” meal.

Alternatively you could opt for the brunch platter which comes with homemade pancakes, waffles, fruit compote and granola together with organic fresh fruit, artisan breads and pastries.

Watch this space for the launch of this exciting new range.

But for now, pies.

Each week I will be including 2 pie options within my weekly menu. One meat/fish pie and one vegetarian for £6.50 each. As you would expect, Just Add Parsley pies are all packed to the brim with a varied range of delicious fillings from traditional steak & ale, chicken, tarragon & leek or mushroom & thyme to the more adventurous spiced lentil and spinach, squash & sage or moroccan spiced lamb.

Bishop’s Stortford Indies

I am delighted to have been asked to help out to feed the fabulous and worthy 160 strong crowd who’re attending the Rhodes Centre for the Bishop’s Stortford Indie Awards. Yes, you read that right. One hundred and sixty people.

Editor Paul Winspear from the Bishop’s Stortford Independent will be hosting an evening celebrating all that’s brilliant about our local community here in Hertfordshire.

pea, mint & feta dip with crudités, caramelised onion & roasted tomato tart followed by homemade mini meringues, cinnamon rolls and a cheese board.

Not every event I do for this many people – I am equally happy to do lunch for 4, date night supper for 2 or just desserts. If you’re interested in my help with a bigger event, please don’t hesitate to get in touch.
