
I left this week’s choice of soups to my children (in the interests family harmony and empty bowls). Their unanimous choices were:
Tomato soup – a favourite winter warmer made with a splash of aged balsamic vinegar to add an extra depth of flavour. The definition of a “hug in a mug”. Delicious with cheese toasties!
Chicken & vegetable soup with stellette pasta – the absolute all time favourite soup in our house. A fortifying, hearty soup which makes to me feel full of health and energy just thinking about it. Made with a whole chicken cooked slowly with loads of vegetables to make a flavoursome broth. The chicken meat is then shredded and fresh vegetables added with tiny star-like stellette pasta.
As ever, I shall be making huge batches of both soups early in the week to sustain us throughout the week so if you would like a pot, let me know early before it is all gone.
