Today is a day of firsts: first day of March and the first day of the last week of home schooling ….. and so I thought I’d mark the occasion by offering two firm favourite soups and also by making this the last week of the restricted weekly menu from the Just Add Parsley kitchen. From next week, when my kitchen is my own again, I will be offering salads, tarts and suppers again.

For this week, though, two of the most popular soups from the Just Add Parsley kitchen:
Minestrone soup – packed full of vegetables, cannellini beans and pasta. I’m going to add some smoky pancetta for an extra layer of flavour.
Curried lentil, tomato & coconut soup (v) – the mention of curry perhaps makes this a surprising favourite with my family but it’s neither too hot nor too spicy. The curry adds simply background warmth and depth of flavour to balance with the naturally sweet tomatoes and creamy coconut milk. Here’s the evidence….
As ever, I shall be making huge batches of both soups today/tomorrow so if you would like a pot to sustain you and your family through this last week of home schooling, let me know early before it’s all gone.
