Back to (home) school again this week and as a “treat” I left this week’s choice of soups to my children again (in the interests family harmony and empty bowls). Their unanimous choices were:
Tomato soup – again. This is their absolute favourite soup made with a splash of aged balsamic vinegar to add an extra depth of flavour. The definition of a “hug in a mug”. Delicious with cheese toasties!
Spinach, sausage & orzo soup – this is a new soup for my family but the combination of sausage meatballs and tiny orzo pasta in a vegetable and tomato broth is a sure fire winner in my house!
As ever, I shall be making huge batches of both soups early in the week to sustain us throughout the week so if you would like a pot, let me know early before it is all gone.
